Ur paper money stock options are always yours to buy once vested. If u still believe in company after quitting u can buy the vested ones and hold on to those ones. If company goes public in future u will make money. If it doesn't go public and moves to series D, series E there might be people who might interested to buy them in pre-ipo market

Most startups give stock options. That means u have the "option" to buy stocks at the strike price when u join. These are not like RSUs which vest and will be yours. Once vested you can buy them or leave them there. U can buy at any time before they expire. If u leave the company u either have to buy them or forfeit them. They only give RSUs to ppl who join very early during seed stage
