I would like to know SEO. I've been offered inbound marketing from HubSpot but I don't believe that specifically the same thing. I'm not looking to spend a lot on this but if there's any online class or book I'd be gratefully appreciated.

Semrush just released a video course that seems decent. Cheap tool. You get it with the ~$200 subscription, and it’s a worthwhile tool.
Also art of seo. Still good.
I’d recommend that you start with articles. Do check out websites like Neil Patel’s and Search Engine Journals. They keep sharing a lot of knowledge on their platforms in easy-2-consume chunks.

This one is good for in-house SEOs https://seomba.com/ mostly helps understand how to build business cases for executives and get your sh%t done at an enterprise. Product-led SEO by Eli is a good book if you want to learn how to think about SEO from a growth perspective aka product led growth leveraging SEO.
Learn from anywhere free or paid books video tutorial but as far as I know You will learn it while practicing
As far as books I would recommend cofounder of SEOMoz Rand Fiskin's "Inbound Marketing and SEO" and "The Art of SEO" by Eric Enge.
