Indian snacks made in unhygienic conditions
It's easy to cook noodles and most of the things are store brought noodles packs with restaurant cooked sauce/broth when you eat at smaller restaurants. Indian snacks requires more work and not many things are easily available in the store. You can train anyone to boil noodles and mix microwaves sauce. It takes time to teach someone to make samosas, pakodi from scratch and store bought frozen items are not the same
It's simple, people like eating Thai and Chinese cuisine more. Even though Chinese and Thai food have spicy dishes there are many delicious choices that aren't ridiculously spicy. All metro areas have plenty of Indian restaurants that are mainly patronized by Indians.
Whereas Brits in the UK go crazy for chicken tikka masala.
There aren’t that many Indians living in the U.S. and they tend to be concentrated in small geographic areas.
Not everyone can successfully digest Indian food.
