Because they don't want to be associated with their titles. Usually self promotion, most likely hoping to be poached for level+1.
Because it's a keyword used in searches, and there can be many different titles and variants at companies that don't mean the same thing.

Right, but why not their titles? Like Principal Engineering Manager?
If they're vague there's a chance a recruiter might think they're a director. Moreover they can simply make some title up when asked directly
I enjoy reading titles on LinkedIn. You look at somebody’s official title inside of the company and their regular employee, their title on LinkedIn makes them sound like an executive vice president that single-handedly runs the whole company.
