Very difficult to enforce, and not enforceable in California. You need to strike this from the offer and send back.

This is included in every Amazon offer, and most offers from other big companies. You won't get them to strike it. Basically it means you won't go to a direct competitor in a substantially similar product space within 18 months of leaving Amazon. It's legally difficult to enforce, and Amazon rarely (never?) pursues it for anything below L8. When any company tries enforcing this, the goal isn't for them to win - they're smart and they know they won't - it's to make it financially infeasible for you to learn trade secrets then immediately use them against them.

WRONG Amazon is the only big company to do this.

That's just not true. Maybe most people just don't read their employment contracts well. I've never seen a company NOT include something like this.

What they are asking for is bonded labor. It's a fact that slavery is the biggest reason for human progress, in this case it will do significant good to Amazon. But the other lowly workers will be at the receiving end. "Right here winners and losers dont get caught on the wring side"
