I have an offer from my current company, which is 2.5x my pay. But I don’t want to continuing working here and the deadline for the offer is before all my other scheduled interviews. The context is the company is small and I’ve been underpaid for a couple of years (because I took the risk). I know upper management well (don’t really want to burn bridges), so not sure if I should accept and continuing interviewing or just quit.

It’s not. It’s 125k base + bonus. Options I don’t count given the stage of the company. But if it matters, it’s 300k (where I have about 30% vested so far) total options at $3 each.
Just take the 2.5 and keep looking . Who the fuck gives 50k/ year to a Software engineer , also considering your association , they have been severely underpaying you for quite some time now. Also the bonus that you mention, that is essentially a portion cut out from your own base salary and given as a meatloaf at the end of the year ( as opposed to big companies whose bonus actually depends on how the company is doing ) 125 is nowhere near FANG salary ,
Exploding offers are bs. Say you can’t consider the offer seriously if they give you a deadline.
There is a hard deadline with written offer.

You will not burn bridges. They will understand. Think about it, you work at a small company then get an offer at a big company like google. No one will look badly on your decision.
