Been saying this for the past year they have a choose high quality but it’ll set it to 1080P not 2160p even when I am on wifi!

Explain please. How can ISP have any control of youtube APIs, CDN or clients? Worst case it will just buffer. I can just hack the client to force to 4k all the time, but don’t want to do that for every platform I watch youtube. It never buffers btw.

You get “Premium” instead of “YouTube” as logo, so you can show your friends “they funny video” when they visit. And show them you are rich.
No ads is the biggest feature
Just get a custom version of YouTube like NewPipe. It allows setting a forced resolution. You can also return dislikes, automatically skip annoying sponsor segments, and not have to watch any ads. It's amazing that you get better service without paying a dime, than what YouTube team could come up with with Premium. Alas that won't fix the asinine treatment of YouTube creators with obscure and opaque demonetizaton often without any reason.
It's can't run on a smart TV and the app leaves a lot to be deserved. It's free though so can't complain.
