When latency occurs on an iPhone call, the voice stream will “speed up” to catch up. What is this called?

Title says it all. This is even when the other party is on a landline connection. (Admittedly VoIP, Vonage) Not exclusive to FaceTime, as I previously thought. This is a very interesting jitter buffer and recovery.
