I don't think YOE is that important, E5 with 3 yr experience and 20 still belong to the same salary band and need to meet similar expectations

Could go up or down, there is risk for sure. Hence I thought pre-IPO firms would pay more in stock to compensate for the risk.

Sounds quite good. Looking at their growth trajectory it's quite amazing, I'd say that your rsu have significant upside. They went from tied 4th in the industry to number 1 in a one year up against strong competitors i.e. uber talent and execution and grubhub entrenched long time leader
Why no signing bonus?
Not offered, but I also didn't ask, is it easier to ask for signing bonus than higher RSU?
Signing bonus shows how committed they are to having you stay. Without it, I would ask for immediate vesting rather than one year cliff.
