I got an email saying my equity will be doubled, and the paperwork to sign is coming soon. I'm not sure what the vesting schedule is, but I believe it's fully vested immediately based on previous contracts. At the same time, I just gave my two weeks notice. Are they required to still give me the equity? Can they not send the paperwork because they know I'm leaving? I plan to consult with a lawyer to check but that will take a few days to set up, so wondering if any of you have insight.

Yep. Due to legalities around an acquisition, and transferring of old equity to new equity, and something about a complex deal structure and avoiding taxes...no vesting schedule.
Is it “new equity” or did your stock get converted as part of the acquisition. These are different things

Read the fine print on your employment contract. My coworker gave 2 weeks notice the day before comp payout and they didn't get it.
Would depend on the contract of the company. The company can deny that to you. You are anyways leaving, why do you feel that you deserve this that you are lawyering up?
It's for work put in, not work to come. I took a shit salary in exchange for these lottery tickets and I deserve em. Why leave free money on the floor if I don't have to?
