What is the scope of the Org or team you would be joining? It is better if you mention details. Let's say you are joining Google Maps. You could say you are excited to help people find new restaurants they will like and know when to go so it isn't busy. And you find the challenge of keeping this information of the physical world up to date and truthful in your digital one very interesting.

By making your answer more specific to the company, you can demonstrate that you've done your homework. If you're applying for some application role, you can talk about how the specific product is great from a user perspective or solves an interesting problem or adds a lot of business value. If you're applying for a infrastructure role, you can talk about how x tool is cool or about your interest in a specific scaling challenge or about their interaction with the open source community.
I feel that question and answer should come up pre-offer.
