I am noob when it comes to tax and vesting, seriously. But let me ask a question: if you defer, you’d be paying more next year, no?

Depends what your year looks like. If you were to take a year off work, and that deferred bonus amount was the only income for that year, then you'd be taxed at a much lower income because you no longer have a base salary increasing your gross income
