You get a signing bonus for the first two years until the RSUs kick in. For the RSUs, it's more likely they'd be considered assets, but not income. It all depends on your lender and your entire financial profile though.

RSU counts as income if you can show that you will be getting the same or more in subsequent years. Works well in the beginning of your vest period. Less so if you are at the back end of it.
