I used MySQL, and for ambiguous syntax such as EXTRACT, YEAR or recursive CTEs, I mentioned the needed assumptions while writing the queries.
I've conducted 100+ interviews for technical SQL screens. I always tell folks they can use whatever flavor of SQL they are most comfortable with. We're interested in the logic not a particular version. Internally we primarily use postgreSQL because of Redshift if you're curious though.
I don’t think it really matters as long as you get the logic right. At least that was the case for me
