Hand pulled noodles are easy. We make it once a month on average. 100% buckwheat Soba noodles would be near impossible to make. Google or YouTube soba noodle making. It’s insane because the buckwheat flour has almost no gluten

I dunno. The 12 year old looking kid on the YouTube video does not suggest Borax for the recipe. It's as simple as cake flour; all purpose flour, salt; water: and vegetable oil
