I'm going to be moving to the Seattle area and working at the Microsoft Redmond campus 2-3 days a week. I'm a single early 30m and I want to be somewhere walkable but not necessarily party central. Having some cool bars nearby to grab dinner/go on dates would be nice, but I don't care about living near the club/party scene. I have a car and will most likely keep it, so it doesn't have to be *completely* walkable. I just want to be able to do stuff like walk to the gym/Starbucks/lunch/grocery store in ~5 mins. Beyond that I'm OK with driving or Ubering.

Considering your requirements, Eastside is a no. Seattle it is!
There are barely places to go on dates in Redmond. Downtown Bellevue is a good middle - a few places to go out, close to Seattle, close enough to MSFT

Apart from *maybe* Bellevue downtown, east side is a snooze fest.
Why not Seattle?
Because it's not east side
