I have been working in BI, analyst roles for 5 yrs and do not feel the work challenging anymore. Not interested in AI ML roles so wondering if learning DE skills can be something with potential to maybe even apply to DE roles. I feel I’m pretty good with sql and data modelling. Have some experience in building python ETL pipelines but not extensive. Anyone in DE role , how would you recommend I should start ? Boot camp? YouTube ? #tech #dataanalytics #dataengineer

Why not? You should highlight the analytical impact you made and not what tools you used in the resume. Not all companies will respond back but some will! You just need to start somewhere.
