Do I need to fill out the professional reference part for google employee app or can I leave this blank? Not sure if I want to put my manager or not but I don’t want my manager to know I’m interviewing.

Isn’t there a check box to say whether you authorize them to contact them? If I were you, I would fill them out, but don’t authorize contacting. If you make it to the final stage, it’s possible they will want to contact them, but by that point you would be ready to authorize. For me, as far as I know I don’t think they contacted my personal references (but of course they did verify my employment during the background check).

References are people that you have worked with that would vouch for you. You vet them and you should even ask them if they are willing to be your reference. Maybe the next job hop you could come back to this manager.
My references were contacted, and it worked out.
