How to ask interviewer about over tasking in sprint without sounding lazy?

I asked an interviewer about sprint capacity and if they have instances where they overcommit for a sprint and how do they handle it? I think he assumed I asked cause laziness cause he said yeah if people procrastinate to the last day then they are up all night before the sprint ends to finish their work. But he also said they are always overcommitting to one week sprints and try to complete 90% capacity. Does this sound like constant crunch time? How do I ask the question better to not make it seem like I’m a slacker? The main reason I ask this is to see if they are constantly in a crunch time. I’m not sure if this a bad question or not

Ask what the teams velocity currently look like and also what points total an individual on average completes in a sprint

Aren’t point/velocity arbitrary? Wouldn’t they need to explain their points system and all that?

There are questions you just don’t ask during interviews. ‘Is the CEO screwing his EA?’ ‘How much do you expect the stock to grow?’ ‘Do you ever overcommit to what you can deliver?’ All good examples of off limits questions.
