... what's the point of keeping it secret. Recruiter can just stalk you on LinkedIn after the fact when you update your profile. Don't disclose the dates of acceptance but it seems fine to give the name.

Declining an unnaccepted offer is perfectly fine and no company woild flag for that. It is the whole point of the offer letter. Declining an already accepted offer can come with a blacklisting though, so be wary of that.
You can just tell them that you have few other better options to choose from and you have not finalized yet. Or you can say due to some personal reasons, you will not be able to go for this change right now and need to decline. No need to explain more details. You can choose to update your LinkedIn profile a little later (a month or 2 later after joining the new place) or not, who cares even if they see it. Just be polite and respectful in refusal.
