In terms of company culture, what is considered to be more of a taboo:
just want to know what makes people uncomfortable working at Google and Apple.

my friend who worked at Apple previously said during a design meeting for iPhone someone set their android phone on the table, the guy talking saw it and fired him on the spot. I dont know how true the claim is or if this was a rumor but apple goes hard on the brainwashing and koolaid
I worked at both companies. At Google, nobody cared. They were too focused on perf scores. At Apple, I got some gentle ribbing, but even there, nobody really said anything. If you are working directly in their mobile divisions, it might be different.
There is no way I’m quitting my precious apple products for shitty Google.
I work on a Mac and carry an iPhone.. Because Google is a major player in iOS apps.... You can actually help be a beta tester dogfooding apps.
Not sure if trolling but I really don't think Apple products are that innovative or high quality anymore. In fact, iphones are now about a year behind on the innovation cycle, basically waiting for someone else to pionner the tech before incorporating it into the next release. Look at the latest iPhone 11 VS the huawei mate 20 pro that came out 1.5 years ago. The Huawei mate 20 came out with everything the new iPhone is trying to market literally year and half ago: from ultra wide angle lens to reverse wireless charging to fingerprint sensor under the glass. Apple is like blizzard. Makes shit games but their fans continue to remain loyal due to nostalgia reasons
We use iPhone because our apps are widely used there as well.
Google makes better apps for iOS than for Android

I have done both. I can tell you that you will be chastised daily in the first scenario. God forbid your wear a Google shirt or anything either. Opposite is perfectly acceptable at Google.
At Amazon, you can use Google Home instead of Alexa, Azure instead of AWS (for personal projects), iPhone or Android, and Walmart or Target instead of Amazon and it's fine. Come work at the coolest company on Earth lol.
Carrying an Android phone at Apple is probably a bigger deal. Apple is primarily a hardware company and iPhone is one of their signature products, while that’s not true for Google.
