Been working as full stack developer for the past 6 years, but have very good Backend experience as well. Was always interested in pure Backend roles but couldn't move to appropriate teams internally. Problem is I'm planning to interview out but no company seems to be interested in offer any other role than a full stack crap. Would doing the cloud computing specialization course in Coursera help to show as experience? What else could I do to be considered for pure Backend roles?

As a blinder said, full stack is master of all trades.... you don't have to deal with core CS concepts when you do full stack shit. infra or platform work is what I want to do, something that deals with scale and consumed by other teams.
backend jobs can be specialized needing years of experience. companies either hire new grads whith zero backend experience or senior folks with extensive backend experience. So it is tough for people like you to get into hard core backend projects. The best way to get there would be to slowly move down the stack. maybe work on service infrastructire, middleware etc.
Join Facebook, pick an infra team after bootcamp, done.
Or any other company with a bootcamp system like that. Airbnb had a similar thing for example.
lies. Most managers do care about previous exp. They might reluctantly take you, but there is no formal training or grace period to learb new stuff. So if you get hired at E5, you better start performing at that level in 6 months. And that is impossible if you have completely changed your domain.
Maybe dont look for 'backend' jobs.. Look for whatever backend language you like working in jobs... Like Java jobs or whatever.
The stack is very deep, so please stop calling yourself or anyone "full stack". There is not a single full stack developer on this planet. And what specifically do you mean by "backend"? Where does your defined boundary of backend start and end?
