What happens if OPT card doesn't come out in time for start date? Can you just push your start date back and will they understand?
OPT start date is max(your preferred start date, OPT approved/card in production date). Companies do understand this issue is with USCIS and many are cooperating. In fact some start ups allow you to work unpaid(officially) for time being and then make up for that period by giving you some kind of random bonus.

Google would be willing to accommodate the delayed joining date. I would recommend either emailing the recruiter or the manager and letting them be aware of the situation.
My start date was pushed back 2-3 times because of OPT and Microsoft was fine with it. I think most major companies hire enough F1s to understand this is a circumstances issue
