Whoever gives a number first loses. Don't anchor your new compensation based on your old compensation. Wait for them to throw out a number. Preferably do this in person or over the phone. Repeat this number and say "hmm" and then keep your mouth shut until they throw out a new number. It doesn't matter how long they take. Here's an example: "We're excited to offer you $110,000" "$110,000...hmm..." 40 seconds of silence "Well we could go as high as $125,000, would that work?" "That would be great! Thanks!" The first number they offer is never their best offer. A few awkward seconds could net you hundreds or thousands per month.
One more thing. If you throw out a number first, you may be leaving money on the table. You may be thinking, I'm just looking for a 10% raise. If you throw out your 10% raise and they were looking to hire you at $180k, they will take your lower number and pay you what you asked for. You'll be happy, but making 60k less per year than you could have.
