I just accepted an offer with a FAANG company with a July 2019 start date (for a new grad program). I’m worried that something could happen in between now and that time that could prevent me from taking the job (like a recession leading to a hiring freeze). I’m also Canadian and so I’d need a TN Visa for the job. I’m worried that the visa may be cancelled before my start date (because of NAFTA talks). Should I push for an earlier start date or am I over reacting?

Why not be paranoid? The last recession a whole bunch of offers got rescinded right? In US people can be fired without reason even before you start working!
It's highly unlikely you'd be able to join. North Korea could bomb the west coast leaving no vacant office space to house you. An all out war could break out between the US and Canada leading to mass deportation. An earthquake could rock the Pacific rim leading to a mass exodus from California.
They have every reason to be paranoid. Orange buffoon fucking up NAFTA absolutely affects them. Specially since there is a path forward with Mexico only, not with Canada. It's fair to worry of what that means for the TN program.

Do not worry. FAANG is great about following through for their potential employees. They already know how competitive you are in the market Stay positive. But also do what you feel you need to do to be sane. Moving up the start date could make sense if it's not crazy early for yourself Once you've signed the offer, you're pretty safe though

If you live in Toronto or Vancouver you can start now in a Canadian office and enter on an L1 if you're that worried about the TN
Did you do that? Was it hard to change from L1 to TN after?
You wouldn't want to change to TN. L1 is an immigratable visa
