Do you have access to people in your social/professional circle who are “customers” of these two? Check with them as a point of reference. Some of the most innovative teams as well as most political/lethargic teams may deal with lots of calls (for different reasons and on a seasonal basis). So wouldn’t count on this being the most important factor. Congrats on having multiple offers.
AWS has at least five time bigger customer base. Although it is more stable, it has more services as well. A guy who came from Aws to Azure said Azure on call is a joke compared to AWS. Microsoft on call is more relaxed with less pressure and understanding managers. There is no such thing as vocally criticizing the self. One of the colleagues came back after 8 months once he experienced this and he felt it was humiliating and company doesn’t respect employees.

Im sure it’s probably team dependent but I felt like the on-call at Amazon was much more brutal than at Microsoft

MSFT including Azure has many, many enterprise customers. They may not be the next cool Silicon Valley fart app with $10m in VC funding - but they have actual sustainable profits. And there’s a lot of them.
