Is there a way to check listings that are recently rented out? I see such filter for “recently sold” homes on websites like zillow and redfin but not a filter for "recently rented" listings.
Not that I’ve seen. Super annoying. Following in case someone sees otherwise

No, because Zillow and Redfin have a vested interest in hiding certain data from you. It’s the same reason they don’t disclose concessions. They wouldn’t want you to know what a house actually sold for. They’re cheerleaders always pushing for higher rents and prices, even when it doesn’t make sense.
Redfin and Zillow don’t have access to info about concessions unless they were acting as an agent in the deal. House sale prices come from public records.
Unaffordable homes means our stock suffers. Your response doesn’t make sense economically
Depending on what you're trying to do with this specific info there might be a way to make it happen but like others said there's not a easy/public way to get it
trying to gauge how long its approx taking for a similar listing to be rented in a specific area
Interesting.... I think hotpads shows how long a listing has been up, but I don't remember how they close it out once it's listed. Maybe set up a feed or something to monitor when something gets posted/taken down ? I think local property management show rented stuff too maybe scrape their site lol

You can also look at current houses on for rent on Zillow and how long they’ve been on market to get idea. You can also call one of the houses listed for rent and talk to landlord to get idea of market for rentals.
