So I am looking for cloud housing (PAAS) like Azure, AWS or Firebase, but most of them offer cheaper price for using serverless architecture like Azure Functions, Lambda or Firebase functions. Would that hurt my showcase to people due to lacking servers on backend or they don't care. Also any guideline for production quality ready code for serverless backends? Serverless is still in hype phase. No large scale application/services are run in serverless mode. It also ties you with a single cloud provider. Unlike containers, where you have flexibility to switch providers or even run in first party DC if needed
Nordstrom just rewrote their entire backend serverless a couple years ago and they seem happy with the benefits
Any white paper on it? Hard to imagine how the entire stack (web, db, backend) are in serverless mode.

No large scale application can switch to serverless. Usually they are used in internal tools or POC projects
