I have heard that Red Hat frequently hires people after casual conversations without detailed in-depth interviews… is that true??

RH does not have a uniform interview process, so the experience may vary greatly. I would believe what you have heard but my own experience interviewing as an intern was a somewhat typical SWE interview interview: one conversational but technical interview and two coding rounds. Now when I interview I make sure to include coding.

i think that is completely untrue. I’ve been an interviewer for 3+ years and i’ve never heard of this before. i would never hire someone to write in my codebase without seeing their technical skills first

I came to Red Hat working on the Linux Kernel (maintainer). I only had a few casual chats.
Depends on the role. You can tell limited things on the interview about a candidate , as long as they fit the culture every thing else can be taught on the job.

Tech companies to avoid as a white guy?
No, that was not my experience. I had multiple interviews including a presentation to 5-6 folks. Also, many of the jobs listed are placeholders. The company is moving very slowly and all roles including strategic hires.
