What would Salesforce total comp look like for a non-Eng, Director role? What about for a Senior Manager role? Am thinking of highlighting ~$300K - $350K as my comp expectations (coming from a FANG).

Director pretty much can get 350 to 450k at HQ. It maps to the same level as Principal member of technical staff. Senior director would be an architect on the engineering side. Their comp can go from 400 to 600 depending on how much RSUs they got refreshed. 300k is like lead member of technical staff/ senior manager. Salesforce comp is competitive with FANG but people work way less hours. There are lots of directors and senior directors with less than ten direct reports. You will just have a better life here with the same comp.
I doubt Salesforce comp is equal to FAANG. In fact there is title inflation at Salesforce in my opinion. Director is basically some Sr. Manager elsewhere.
