It's probably not in any company's best interest to fire you for no reason.. If they do too much of that they may not be able to attract new talent .. Not saying it doesn't happen.. Does your correct also say binding arbitration?
It is standard text in the states where that is the rule. Startups are always a risk, I am not an expert at it, but several blind posts go into details of what to look out for. The pre vesting would be a dirty move. Look to their track record and other employees, if they have been around long enough. People talk in small companies and you can quickly find out if people are not trustworthy to invest your time there.
