Let's suppose that I have $100,000 saved up and I want to buy a property in 5 years. Where do people put their investment money in so it can grow? Why don't I just keep it in VSTAX for 5 years and then sell when I want to buy? Surely it would be better than flushing it down the toilet in a HYSA, since they're both taxed?

Five years is a long time. Invest in stable diverse international indexes. No matter who wins the trade war, you want to be able to buy a house.
S&P 500 index fund. U.S. has a stronger economy than Europe and China right now and has for some time. Stay away from int’l. (70% of S&P500 companies’ revenue comes from the U.S.)

Buy lottery tickets. Surely one will be a big winner. If necessary take out a cash advance on your credit card to do so...
