Even if one person was an IIT JEE Topper that went to IIT Bombay and the other went to a tier 3 college back home, it doesn’t seem to matter to recruiters in the US. Seen the toppers from India get passed up lots in the US post MS. Why even work hard in India vs enjoying childhood/early adulthood if it doesn’t matter?
Other than inflated egos, what's the difference? I have seen so many IITians switching to become project managers, while so many others from so-called "tier 3" colleges become VPs, chief architects, and founders.

They barely care about "prestige" of *American* colleges.
This. It's more of "heard of that one" for brand recognition maybe. No real prestige. Plus in general it's a hard sell going for straight bachelor's new grad roles in US from elsewhere, and your college doesn't typically matter much past your first job or two.
Best IIT is same global prestige as Ohio state.
Sites and rankings can be rigged against India, acceptance rate tells a different story. No one is clamoring to go to Ohio State.

IIT isn’t even good enough to get HPI visa into the UK meanwhile university of Michigan is on there which isn’t particularly selective. But there is day and night difference in performance for tier3 vs iit Bombay topper . Those smart & hard working folks can digest info quickly & intuitively come up with solutions covering 95% of cases vs 70% by a tier3 on a first attempt. This is from my personal experience! (FYI: I am the tier3 guy & my colleague is AIR < 50 iit B )
Success isn’t solely dependent on hard skills like coding. Performing in the real world requires a mix of soft and hard skills that is not dependent on which school you went to. People skills are equally important in the workplace today and Indian schools rarely tap into that.

University prestige != Actual work time hustle
As a general rule, one cares about the prestige of any university that’s not in their home country. The Americans don’t care about University of St Andrews, Karolinska Institutet or Yonsei either. Those are all very prestigious universities in their home country but means little anywhere else. Regardless of industry, people will definitely favor hiring a local state university grad than some foreigner with prestigious background.
Many IITians get good prestige and hence good paying job in India itself. To answer your question, if you already know and 100% sure that you want to grow up and emigrate to US then yes it doesn't make sense to go to IIT vs any other college, as you said - the US recruitment doesn't recognise the Indian college prestige
