Most restaurants seem to be Nepalis trying to replicate North Indian(somewhat ok) and South Indian(oh god) food. Can anyone explain to me why the quality is so poor? Even if you go to Fremont or the South Bay, the quality pales in comparison to a random Indian restaurant in the NJ/NYC Area. Why is that?

Nope. New York and Boston have plenty of Westernized Indian restaurants with somewhat toned down spice levels. The flavors are noneyheless vastly superior to most of the Indian restaurants out here.
Authenticity is not all about spice. Gujarati cuisine, for example, is not at all spicy.
Chicken Tikka masala is the Pinnacle of Indian food.
Nothing beats tandoori chicken with kingfisher.

1) majority of people who run/cook these restaurants have never been to india. If they are from india then probably immigrated 20-30 years back. 2) spices are changed to attract white people 3) kitchen equipments like tandoor are altered with cheap replacements which alters taste 4) indian food sold here is only lookalike indian food. 5) the vegetables used here taste quite different from India. I took 5 americans last month to mumbai for trying indian food. They were mind blown in the vast difference how food actually tastes in india.
Uk has decent Indian food pretty much everywhere. Judging by accents, owners often would be 2-3 generation immigrants, yet the food is so good!
