That's not true. ServiceNow products are much better than the ones provided by Microsoft.
IIUC their main value add is integration between various other enterprise platforms into a single one (that's why they call themselves "platform of platforms"). That seems useful even (or especially) in AI era, because it makes it possible & easy to write applications that sit on top of all these platforms. Seems like AI-assisted application building will only boost them further. (Disclaimer, I'm biased as I'm one of the faang folks about to move over.)
