If you join a team on critical path for D team goals at Amazon, with a big charter for innovation, you will learn a metric fuckton. May burn out in the process, but you will sure as shit learn a lot. I have 16 YOE, been in senior roles all over, and have learned more at Amazon than anywhere else in my career.

Amazon, hands down. You'll have access to mentors and to plenty of classes and reading material. You'll get strong guidance in best practices and an opportunity to learn hands-on how to build software at scale, as well as soft skills you might not develop on a smaller team. What is lacking a bit here is opportunities for experience with open-source technologies that are widely used outside of Amazon. This is something you should be aware of, but I think it's more crucial to learn design and dev principles, best practices, and soft skills than it is to be well versed in any specific software stack.
