A good number of openings I see are simply data analyst positions with domain-specific reporting with a minimal or even no tech stack involved beyond Excel or Tableau

Absolutely. The last 3 places I've been have had data science orgs led by "VPs of data science" who were all 4 years out of college.
It has lost prestige as BI pushed in and researchers left, but middle ground generalists who are "real" data scientists and never really had the title to themselves still exist under it. More engineering, ML and statistics skills than a business/data analyst, more business focus than an ML researcher.
