Build a simple site to crawl and aggregate data from say multiple sources? Please don’t work on Coronavirus we have enough.

Crawlers are actually easiest to build that helps you aggregate data and understand how web tech works. This is super basic that every engineer knows.
How about a live dashboard of the stock market (like td Ameritrade)
Ah you mean live dashboard with all modules and you can add/remove the one you like? Most of the components afaik have an underlying micro service and utilize REST for displaying live or delayed quotes. I am not sure if those APIs are available for free in public space, but I can google for more info ;-) Thanks.
In fact that's a good idea, all public information sources which are open for you to crawl you can present them in the app and user can customize them in what they wanna see, interesting :-)

Is the Udemy course worth it? Did you have any coding experience prior to this? Any other info?
I have worked on couple of proprietary languages like ABAP (oops) in start of my career and then moved over to Java. I have coding experience but it's not that valuable except oops fundamentals that I can use in any language. In later point of my career I feel I start liking web more and more so I started with Web dev learning courses.
The course that I am taking is definitely worth 10 bucks as trainer is super fluent and focused and he is making sure that we have more hands on.
