No it is not particularly wise. Showing yourself to be untrustworthy to your new employer is not a good look. Probably wont work either.
Big no-no especially if you are coming in for a role with 10+ yoe - a senior or principal role.. One of the important traits to show during the interview is to evaluate trade offs between choices, quickly come to a decision with justification and committing to it..

You can ask but they're probably going to say no because you already signed and it'll just end up being awkward. I doubt they will revoke your offer if you tried asking, but definitely don't come off like an asshole and demand a sign on. If you are not close to the hiring manager, they might be upset and question your motives as well.

If he or she is young then I donât think theyâd hold it against them. Thatâs just inexperience on the new employees part.
