It was a small family owned company. While i was there i realized that career switch i wanted to make. I’m turning 23 this year by the way if that helps.
I would downgrade that title a bit to describe what you actually did, or at least add that it was a small family owned business for context
COO to Intern? Outputs instead of outcomes? How does COO experience pertain to the role you're trying to get? Did you really need to stylize Latex??

Dude remove or rename the COO title. You sound pretentious af. How can you go from COO to an intern. Doesn’t look good.
How can you write over 5000 lines of ECMAScript, React and Nodejs but less than 1000 lines of JavaScript? ECMAScript is JavaScript and React and Nodejs are also both JavaScript.

Have the tech you were using embedded with the roles you were using it. Make your bullets action oriented for things you did. All code was reviewed - what does that mean? Did you do it? Did someone else? What did you actually build and with what? Drop the COO role. If it was a small family business and not related to the work you are looking for just get it off your resume. Drop life long learner at the top. That doesn’t add value especially when you’re still in school. Just a few immediate thoughts.

I would just say your bullet points aren’t very formal and could sound much more technical / impressive. There are no statistics or achievements listed on your jobs Your projects are very boring tell me more about what you did technically. I feel like it’s too dumbed down Edit: I just saw the languages part. Dude what. Does over 5000 lines mean 💀 get rid of that… 5000 lines means nothing. Categorize these skills by type. Ex: Front end Backend Databases Other
