Is it okay to ask my company about the total number of Stocks available and the current strike price. I have been offered x number but don't know what to do with them.
Not only is it ok but you'd be foolish not to. If they refuse to tell you, you should look elsewhere.

Someone need to start a blog or a meetup about employee stock options. I have seen so many people that have no idea what they are dealing with and getting screwed really bad by their employers... Definitely one of my favorite subject now and always talking about it around me to raise awareness among my friends and helping then picking their next gigs.

It's likely that your manager doesn't know it well enough. Talk to someone in finance, HR or whomever sent you docs about equity.
Not only is it ok, it's imperative you do. Share count means nothing in the age of reverse splits and dilution.
